Cake: Cream together first 6 ingredients, then add water, flour, and cinnamon. Beat well. Stir in apples and nuts. Pour into a 13" x 9" pan. Bake at 350 degrees for 50-60 minutes. Cool.
Topping: Melt butter in small skillet. Beat egg and combine with brown sugar. Add to butter. Cook slowly over very low heat until thickened. Add Rum Extract. Cool completely and then mix in whipped topping. Refrigerate.
