LEMON COFFEE CAKE

1 pie filling recipe Watkins Lemon Dessert Mix
1/2 cup butter, softened
1 cup sour cream
1 cup white sugar
2 eggs
1 tsp. Watkins Vanilla Extract
1/2 tsp. baking soda
2 cups all-purpose flour
1-1/2 tsp. Watkins Baking Powder
1/2 tsp. salt

Crumb Topping:
1/2 cup all-purpose flour
1/2 cup white sugar
1/4 cup cold butter
1 tsp. Watkins Cinnamon
1/2 cup chopped nuts

Prepare lemon pie filling according to recipe on label; cool. Combine next six ingredients in a bowl. Sift together the 2 cups flour, baking powder, and salt; stir into vanilla mixture. Spread half the dough in a greased and floured 13 x 9-inch baking pan; spread lemon pie filling over dough. Top with remaining dough, spreading with wet knife (if necessary to spread dough).

With pastry blender, work remaining ingredients until mixture resembles crumbs. Sprinkle crumb topping over dough layer. Bake at 350 degrees (F) for 45 minutes or until topping is golden. Cool to room temperature or chill, if desired.
